The Perfect Fall Granola

I love the Fall! Even though it's not technically Fall yet, I am already enjoying some of my favorite Fall things. This granola is absolutely perfect for a cool morning or an afternoon snack. You can eat it on it's own, with the milk of your choice, or over yogurt. It took me only about ten minutes to whip up which also makes it an awesome option when you are in somewhat of a rush.

The Perfect Fall Granola

1 cup rolled oats (can be Gluten Free)

1 cup chopped raw nuts, I used walnuts, pecans, and almonds

1/4 cup of raw pumpkin seeds and sunflower seeds

1/4 cup of dried fruit (optional) I used dried cherries

2 Tbsp of extra virgin coconut oil

2-3 Tbsp Grade A maple syrup

1 tsp sea salt

1 tsp pure vanilla extract

Preheat the oven to 300° F. Add all ingredients to a large mixing bowl. Mix thoroughly (I used my hands), making sure you get all of the oats mixed with the coconut oil and maple syrup. Cover a pan with parchment paper. Place the granola on the parchment paper in a thin layer. Bake in the oven for 15 minutes or until lightly toasted.

Enjoy the granola on its own or add some milk of your choice to eat it like cereal. Feel free to swap out different nuts or dried fruits. Have fun!
